Full of summery flavours, this sauce could be used to coat cooked pasta, it could be drizzled on a salad or swirled on a soup. It’s full of pea benefits and full of taste.

1 200g Frozen Peas |
1 50g Baby Spinach Leaves |
1 Small Bunch of Fresh Mint Leaves |
1 Garlic Clove |
4 tbsp Olive Oil |
1 tbsp Nutritional Yeast |
1 tbsp Cashew Nuts |
1 tbsp Lemon Juice |
Place all of the ingredients into a blender and process until smooth. Add a little water or extra oil if you want it a little thinner.
Store in the fridge in a sterilised jar for 4-5 days.
