Italian Roll Ups

Serves 3-4 as part of a Picnic

Italian Roll Ups

2 large Tortillas (use gluten free if needed)
3 tbsp Cream Cheese (can use a Vegan one)
1/2 tsp Garlic Powder
200 grams Plum Tomatoes, de-seeded and finely chopped)
2 tbsp Black Olives (finely chopped)
1 Yellow Pepper (de-seeded and finely chopped)
3 tbsp Fresh Oregano/Basil Leaves

Italian Roll Ups Directions

Lay the tortillas flat on a chopping board. Mix the garlic powder into the cream cheese. Spread the cream cheese mix all over the tortillas, making sure one end has more as this will help glue the roll up.

Mix all of the vegetables and herbs together and scatter all over the cream cheese on the bases.

At the other end of the extra cream cheese, start to roll up the tortilla, folding over the edges going down the sides to seal. Make sure you roll this up really tightly. You should reach the end with the extra cream cheese and this should help it stay secure. Wrap in foil or cling film and place in the fridge for up to 24 hours. Repeat with the other tortilla.

When ready to pack or serve, remove the two rolls from the fridge and slice in to 2 cm disks.

Enjoy as part of a Mediterranean inspired picnic or take to a social lunch.
