Feta and Orzo Salad with Sundried Tomatoes

400 grams orzo
150 grams feta cheese, cubed
3 tbsp sundried tomatoes, chopped
1/2 medium head of broccoli, chopped in to small florets
2 tbsp chopped fresh mint leaves
2 tbsp chopped fresh chives
3 tbsp olive oil
1 lemon, zest 1 tbsp juice
1 tbsp balsamic vinegar
2 tbsp black sesame seeds


Cook the orzo in plenty of water and as instructed on the packet.
Towards the end of cooking, add the broccoli and cook until just softened.
Drain and leave a little water in the bottom of the pan and leave them both to cool.
Mix the olive oil, chopped herbs, balsamic vinegar, lemon juice and zest together and pour over the orzo and broccoli.
Add the cubed feta and sundried tomatoes to the pan and mix well.
Divide between 4 plates and sprinkle over the sesame seeds.

*You could use grilled halloumi or vegan cheese for this recipe too, to make a change.

Recipe notes

Try to find our sundried tomatoes in the shop that are packed dry in bags and not in oil. You could use those or oil packed ones, just use a little less oil in the dressing.

Feta and sundried tomatoes are both very salty so don’t add any extra salt to this dish.
