Chestnut brussels

1 large onion (chopped)
1 Garlic clove (chopped)
300g chestnuts
300g brussels
300g breadcrumbs
150g mushrooms
2 eggs
1 mixed herbs


Fry off onions till soft. Add mushrooms. Cook for couple of minutes. Add garlic. Put into a large mixing bowl. Steam brussels for 10 mins. If you are using dried chestnuts (these should be soaked overnight.) Then rinse, and put on tray and put into a hot oven for 10 minutes. If using tinned chestnuts, just drain and add to ingredients in the bowl. Mix in breadcrumbs and herbs. Beat 2 eggs and add to bowl mixture. Mix well and then cook in a large loaf tin at 190c for 30 mins or until golden brown.
