Many of us have tried a variety of dishes with cauliflower “rice” and this recipe takes this a little further, by creating a gluten free flat bread that could be used in a number of ways. Use whatever fillings you like.
Cauliflower has a number of benefits that improve our nutrition. It contains vitamin C, vitamin K and vitamin B6, which can boost your immune system, maintain healthy blood and to keep cells working efficiently.

1/2 medium head of cauliflower |
1 tsp onion powder |
1/2 tsp garlic powder |
1/2 tsp salt |
2 tbsp coriander, chopped |
145 grams almond flour |
30 grams coconut flour |
30 grams psyllium husk |
2 tbsp flaxseed |
2 eggs, beaten |
A little olive oil to cook |
Place the cauliflower in a blender and process until it resembles rice.
Mix the cauliflower with the powders, flours, salt, psyllium husk, flaxseed, eggs and coriander and leave to thicken for 30 minutes.
Oil a large frying pan and roll out 4-6 rounds of dough. If it’s still a little sticky you can push out with floured fingers and not use a rolling pin.
Cook each separately for 4-5 minutes on both sides, until golden and cooked.
Prepare your fillings and serve immediately. If you are not serving straight away, you can pre-prepare these wraps and place in the fridge for up to 48 hours.
Options to fill:
Handfuls of cooked chicken breast, shredded and mixed with sweet chilli sauce
Pulled “pork” using Jackfruit (see recipes)
Grated cheese/vegan cheese with shredded spring onion
Jarred peppers, basil, mozzarella
Anything that you like!
