Apple and Date Tarts

Serves: 4-6

This recipe is a great way to make a tart in the winter months, using store cupboard ingredients and some old English apples.

Category: Desserts & Drinks

For The Crust:

250 grammes Oat flour (gluten free)
3 tbsp Dairy free butter
1/2 tsp Salt
2 tbsp Coconut sugar
1 tsp Ground cinnamon

For the Filling:

3 Old apples, such as Cox’s or Russets, cored and thinly sliced
2 tbsp Fresh lemon juice
4 tbsp Date syrup

Pre-heat the oven to 200°C/Gas Mark 6 and grease individual tart tins or 1 shallow tart tin.

Place the apple slices and lemon juice in a bowl together to prevent the apples from browning.

In a bowl, add the flour, sugar, salt and cinnamon and stir together. Cut the butter into the dry ingredients and keep rubbing it in until you have a crumbly dough.

Push the dough into the tins until a smooth case is formed, reserving 2 tbsp of the crumbs.

Lie the apple slices on top of the tarts and divide the date syrup on top. Sprinkle the remaining crumbs on top of the apples and date syrup and bake for 15-20 minutes, until the pastry and crumbs are cooked and golden.

Serve with yoghurt, custard or ice cream.
