Coconut Flour Pancakes & Orange and Maple Syrup Drizzle  (G/F)

These pancakes are served warm with a gloriously sweet drizzle, that adds some moisture to the coconut flour, producing a soft, oozing pancake. To create a really crunchy crust on the outside, be generous with the coconut oil when cooking them.

Pancake

  • 4 Eggs
  • 4 tsp Baking Powder (GF)
  • 1/4 Cup Coconut Flour
  • 1 tbsp Sugar
  • Pinch Sea Salt
  • 1/4 Cup Milk – any kind

For The Drizzle

  • 4 tbsp Maple Syrup
  • 1 tbsp Orange Juice
  • 1 tbsp Orange Zest

Coconut Flour Pancakes & Orange and Maple Syrup Drizzle (G/F) Directions

Whisk the eggs, milk, sugar, salt, flour and baking powder together until well combined.

Heat the maple syrup, orange and orange zest together in a small saucepan and heat for 5 minutes over a medium heat until a little thickened.

Heat the oil in a frying pan and cook spoonfuls of the pancake mix over a medium heat. Cook for 2-3 minutes on one side before flipping over.

Serve on to 4 plates and spoon over the drizzle whilst still warm. Add the Greek yoghurt and oranges if using.
