This is unlike any ‘supermarket balsamic’ (in fact, look at the ingredients in the cheap ones & you might be surprised!), neither is it in the same class as the cheap, sugary vinegar's that are made with 40-50% sugar. Instead, this is an incredible partner to anything and you’ll only need a few drops to give a real richness to anything. The lightest drizzle on anything will give you an incredible boost.
It works brilliantly with your favourite oil to make the most perfect dressing for a robust duck salad, but it’s so rich and complex we suggest you try it first without oil for a pure, clean taste.
As well as a bread-dipper, it’s the perfect partner to roast vegetables or tomatoes but it really excels when a few drops are drizzled over duck, venison or any game. Add a few drops to a stir fry, gravy or jus for an extra special sauce or make a marinade by adding a dash to oil, crushed garlic, thyme and whatever else you fancy: marinate pigeon or game for a few hours before cooking as usual and you’ll have a dish sure to become a household favourite.
