Victorian Mulled Wine
Ingredients
1 bottle sparkling wine
1/4 /140ml Blackcurrant syrup
3 large oranges
9 cloves
1 cinnamon stick
1/2 tsp Ground Mace
1/2 tsp Ground Ginger
Vodka or Gin to taste [optional]
1/2 pt /285ml fruit juice [optional]
Sugar to taste
Method
1. Stud each orange with 3 cloves, place in a
deep ovenproof dish and bake for 20 mins.
2. Slice the oranges into a bowl.
3. Heat the wine ,and fruit juice if using, with the cinnamon, mace & ginger.
4. Add the blackcurrant syrup, oranges and cloves and continue to heat.
5. Sweeten to taste and then introduce the Vodka or Gin if using.
6. Serve and enjoy.

Gluhwein - Serves 6
Ingredients
1 bottle full-bodied vegetarian red wine
1 orange
16 cloves
1 cinnamon stick
4 split cardamom pods
2” fresh root ginger
4-6 tbsp sugar
200ml brandy (optional but recommended!)
Method
1. Pour the wine into a large saucepan.
2. Cut the orange into quarters and push cloves into the rind of one quarter.
3. Slice the remaining 3 pieces thinly.
4. Add the orange quarter and slices to the pan with the
cinnamon, cardamom, ginger and sugar.
5. Heat slowly until hot, but do not allow to boil and add the brandy
6. Serve in heatproof glasses or small cups. If you are worried about the glass breaking, stand a metal teaspoon in the glass before adding the hot liquid.

Calypso Punch
Ingredients
1 bottle vegetarian red wine
½pt/250ml apple juice
½pt/250ml pineapple juice
¼pt/150ml lime juice (optional)
2 cinnamon sticks (broken into 3)
1½tsp freshly grated nutmeg
1 bay leaf
1oz/25g soft brown sugar
slices of citrus fruit
Method
1. Warm the wine, fruit juice, cinnamon,
nutmeg, bay leaf and sugar over a low heat, stirring frequently until almost boiling.
2. Remove from heat and leave to infuse for at least 1 hour (the longer it is left to infuse, the stronger the flavours become).
3. Return to heat, add fruit slices and bring close to the boil again, adding sugar to taste. (At this stage you can also add 1tbsp/15ml of your favourite liqueur or spirit, if you wish)
4. Pour into a warmed punch bowl and serve in goblets with the slices of fruit and a piece of cinnamon.

Mulled Cider
Ingredients
3½pts/2L dry vegetarian cider or fresh apple juice
2 apples studded with cloves
4-6 cinnamon sticks
5-6 allspice berries
zest of 1 orange
dark rum (optional)
slices of apple for garnish
Method
1. Combine all ingredients in a large saucepan and simmer gently for 30 minutes - do not boil
2. Transfer to a heatproof bowl and ladle into glass mugs. Garnish with apple slices to serve.
Tea & Fruit Punch - Serves 20 plus 
To give the punch a kick, you may add a bottle (more or less depending on your taste) of vodka or gin.
6 apples, peeled and sliced
4 bananas, peeled and sliced
8oz/225g seedless grapes or halved and pitted grapes
4 pints/2.2 Lt water
1½lb/675g sugar
juice of 5 oranges
juice of 5 lemons
1 pint/600ml ginger ale
½pt/900ml cold tea or herbal tea
1½pt/900ml soda water
1 bottle gin or vodka (optional)
1. Put the fruit in a punch bowl.
2. Heat the water in a pan and dissolve the sugar and the fruit juice, stir well and simmer for 5 minutes. Pour over the fruit and set aside to cool.
3. Just before serving, add the ginger ale, tea, soda water and alcohol.

Cranberry & Pear Sparkle
Ingredients
6tbsp/90ml pear concentrate
1¾pt/1L sparkling water
1¾pt/1L cranberry juice
1 medium pear, cut into ½in/1cm pieces
sprigs of fresh mint

Method

1. Mix the pear concentrate with the sparkling water.

2. Add the cranberry juice and chill well.

3. Just before serving, add the chopped pear, and garnish with fresh mint leaves.
 
Spicy Apple Drink
Gently warm a pint of water with 4 tablespoons of apple juice concentrate, a pinch of cinnamon and two cloves. If you can't get hold of apple concentrate ordinary apple juice is just as good. Simmer for 5
minutes remove the cloves and enjoy.

Hot Banana Shake
Soya/Rice/Oat milk or dairy milk work equally well. Blend a banana, a pint of milk and a tablespoon of brown sugar. If you haven't a blender or don't want to use electricity, it is possible to use a fork to mash the banana up!

Transfer to a saucepan and gently warm.

Orange Lemon and Ginger Swinger
For this recipe you can either use freshly squeezed orange juice, or a
carton of fresh orange juice.

1. Gently warm one pint of fresh orange juice, the juice of one lemon, and a small (approx 2cm) cube of ginger root, which needs to be either chopped up or bashed with a rolling pin to release the juice.
2. Simmer the liquid for five minutes.
3. Remove the ginger and enjoy.
