This simple recipe uses only a few basic ingredients and is perfect when you have little time or want to cook something simple. Whenever possible opt for wholewheat/wholemeal foods, and include brown rice in your diet as the vital nutrients these foods provide are preserved, unlike the white versions which have had most of, if not all, of it's nutrients stripped.
Easy Smoked Tofu Curry with Brown Basmati Rice Vegetarian, Vegan, Nut-Free, Gluten-Free
Ingredients: 180 g/6.3 fl oz/1 cup brown basmati rice, rinsed * Put the rice in a pan of boiling water and bring back to the boil. Then simmer for about 30 mins, making sure that the rice is immersed in the water at all times and topping up as necessary.
