Lemon Artichoke Pesto

Pesto is an ideal way to add immense flavour to anything from pasta dishes or baked potatoes to simply atop some lovely steamed vegetables! 

Lemon Artichoke Pesto

Serves 4

Vegetarian, Vegan, Nut-Free, Soy-Free, Gluten-Free

Ingredients:

250g jar marinated artichokes *
2 garlic cloves
½ lemon, juiced and zested
½ cup (or mug) basil, lightly packed

Method:

Drain the artichokes, reserving 2 tablespoons of the oil (if artichokes are not marinated in oil, use olive oil for the next step). 

Place the drained artichokes, oil, garlic, lemon juice and zest, and basil in a food processor and blend until smooth. Alternatively process until thoroughly mixed if a chunkier texture is preferred.

If not used straight away, keep pesto in a tight-lidded container for later.
