| Mock Duck Pancakes |

Mock duck pancakes are easily adaptable and more-ish, great when you want to cook a nutritious and special meal a quickly! This recipe can be doubled if catering for more than two people. Mock Duck Pancakes Vegetarian, Vegan, Nut-Free, Soy-Free Option
Ingredients: 3 packs chinese-style pancakes, thawed (available from oriental supermarkets) Method: Cut all the vegetables into long strips and arrange on a small plate. Put the plum sauce in a small container. Chop the mock duck into fairly small pieces and heat the oil in the pan until hot. Add the mock duck and cook on a medium-high heat, stirring often, until it starts to dry a little and browns (don't worry if it starts to stick, use a wooden spoon to scrape the stuck bits off). When ready, serve on another small plate. Cook the pancakes as per instructions (around 20 - 30 seconds in the microwave on full per bundle). Arrange on yet another plate (you may want to put these on a hot plate to keep them warmer for longer). Take a pancake, spoon some plum sauce in the middle and add small quantities of the mock duck and vegetable strips. Wrap the pancake up (bottom first, and then the sides so the sauce and filling doesn't fall out) and eat! Consume straight after assembling each pancake so they don't get cold too quickly. Soy-Free Option: Substitute the mock duck for deep-fried aubergine slices drained on kitchen roll. Once cool enough to handle, cut into long pieces and serve on a plate, ready to be put into the pancakes.
